Just thought I'd show some of the process for this cover. I begin with the traditionally done pencil sketch submitted to Marvel for approval, then I work on the values and lighting in grayscale, and finally I add color and texture. In this particular case, with just a single character close-up, it wasn't very painstaking.
I adjust and tweak the structure as I paint. If you have the luxury of time, you can assess flaws much more objectively by setting the work aside and not looking at it for a few days.
It depends on how saturated I want certain colors. I use color layers, color balance layer masks, gradient map layer masks, and even color mixer layer masks. After that, I'll pile on even more adjustment layer masks to tweak the color to exactly how I'd like it. It's a very fluid process.
One thing I did here that you generally shouldn't do is make the grayscale version so refined and tight. It should really be in a looser state so that when you finally do add color, the final product will have more interesting color blends and texture. I tend to overdo the grayscale stage. Bad habit.

I just find that color really distracts me from getting values right. Grayscale is a good way to hold my focus.
